"Centennial Hills has its own rhythm," Kyle Archer, owner and CEO of Elevated Huts, said when his company opened a Cheba Hut on N. Durango Drive this spring. He was talking about families, late-night crews, and hikers coming down off Red Rock looking for a sandwich. He was also, without meaning to, describing something that only shows up if you track every restaurant announcement in this neighborhood against what actually happens next.
Five different restaurants have made news in Centennial Hills so far in 2026. Two are open and serving food. One opened on a date almost identical to what was promised months earlier. One is still listed as "Coming Soon" nearly two months past its own stated target. If you live here and have been half-following the headlines about what's replacing what along Centennial Center Boulevard and N. Durango, the useful question isn't which restaurant sounds best. It's which announcements you can actually plan a Friday night around.
What's Actually Open Right Now
Start with the one that carries real weight for anyone who has lived here more than a few years. Sushi Loca closed in February after 17 years at 6181 Centennial Center Boulevard, the kind of run that turns a strip-mall restaurant into a neighborhood landmark. A Shake Shack has since taken over that address, tucked between Olive Garden and Panera Bread, and it's now open and serving. Local coverage at the time noted that Clark County building records showed work underway on the site since at least March, well before the sign went up, which is a useful detail if you ever want to guess how far along a "coming soon" project actually is: permits move first, signage moves second, and the doors open last.
Cheba Hut "Toasted" Subs is the other confirmed opening. It held its grand-opening party on March 29 at 6485 N. Durango Drive, and by all accounts the timeline held. Archer's company, Elevated Huts, is the franchise's largest operator, and the Centennial Hills location was built specifically around the mix of people who actually live out here: families in the afternoon, hikers rolling in from Red Rock, late-night regulars after that.
The most recent addition is Jet's Pizza, which opened August 19 at 8426 Farm Road, at the corner of North Durango and Farm. It's the brand's third location in the Las Vegas market, and the franchisee behind it, Doug Pierard, described it as an expansion into "the growing Centennial Hills community." That's three restaurants that went from announcement to open doors without much drama.
The One That's Still Just A Sign
Here's where the pattern breaks. The Great Greek Mediterranean Grill announced back in April that it planned to open a location at N. Durango and the 215, with a target of July. That target came from the franchise's own co-owner, Nick Della Penna, in an interview about the chain's Valley expansion. July has come and gone. As of late August, the brand's own location page for Centennial Hills still lists the address with no confirmed opening, no announced date, nothing beyond the fact that the storefront exists on paper.
This isn't a case of nobody caring. The Great Greek is in the middle of an aggressive national push, with more than 20 new locations planned across the country this year as part of its 15th anniversary expansion. Centennial Hills is one storefront in a franchise system opening restaurants from Egypt to Australia to Canada in the same twelve months. That scale cuts both ways. It means the brand has the capital to eventually land here. It also means a single Centennial Hills lease is a low priority next to whatever market is closer to a franchisee's next big milestone.
WSKY Bar + Grill sits somewhere in between. The company confirmed it's remodeling a space at 6470 Kevin Way, in the spot that used to be Born and Raised Centennial, and its own marketing team told local reporters they're hoping for a September 1 opening. But they said it themselves in the same breath: that date isn't confirmed yet. WSKY already runs six locations around the Valley and has twice been voted Best Happy Hour in the annual Best of Las Vegas readers' poll, so this isn't a startup without resources. It's a company that's being honest about the gap between a target date and an actual one.
"We're currently working on remodeling the location. We hope the site is ready to open on September 1st, but that date is not confirmed just yet."
That kind of hedge is worth more than most press releases, because it tells you exactly how much confidence to put in the date.
Two Different Clocks
Line the five up side by side and a pattern appears that has nothing to do with how good any of the food is.

The three that landed close to schedule, or opened without much runway between announcement and doors-open, are all backed by companies that either have dedicated real estate and construction teams or are working off building permits that were already well underway before any public announcement. The two that slipped are franchise concepts juggling a single Centennial Hills lease against a much larger national rollout. Neither WSKY nor The Great Greek is struggling. They're just further down someone else's priority list than a Shake Shack corporate office building out its next standardized box.
What This Means This Month
If you're deciding where to actually eat around here in the next few weeks, the practical takeaway is simple:
- Shake Shack, Cheba Hut, and Jet's Pizza are open now. That's not speculation, that's what's on the ground today.
- WSKY Bar + Grill might open by September 1, but treat that as a hope, not a plan. If you want confirmation, watch for the brand to update the "Coming Soon" tag on their own locations page, which is usually the last thing to change before a soft open.
- The Great Greek is real estate, not a restaurant, until further notice. The lease exists. The kitchen doesn't, at least not one serving customers yet.
None of this changes what makes Centennial Hills worth living in day to day, the parks, the quick 215 access, the fact that you're 30 minutes from the Strip and considerably closer to Red Rock. But it does change how you read the next "coming soon" banner you drive past on N. Durango. The corridor between Centennial Center and the 215 has more retail turnover happening right now than it has in years, and knowing which of those signs represents a done deal and which represents a hopeful lease is the difference between planning around it and just waiting on it.
